Steeped in the legend, lore and romance of the Scottish Highlands, these shaggy, long-horned cattle continue to win the hearts of small farmers and ranchers worldwide with their dramatic appearance, outstanding foraging capabilities and mild temperament. Like many old heritage breeds, the Highland breed was bred to survive harsh conditions and thrive on diverse forage while providing the farmer with high-quality products. Although these cattle are especially renowned for the quality and taste of their meat, which is lean, wonderfully fine-textured, and a consistent winner of blind taste tests, a Highand cow can also provide rich milk for both her calf and owner.
